Honey is one of the oldest naturally produced sweet foods enjoyed by people around the world.
Unlike refined table sugar, honey is produced by bees from flower nectar. The nectar is collected, transformed by the bees and stored in honeycombs, where it gradually becomes the thick, naturally sweet food we know as honey.
Why does honey taste different from jar to jar?
Not all honey tastes the same.
The flavour, colour and aroma can vary depending on the flowers and plants from which bees collect nectar.
Some honey can be light and delicate.
Other varieties can have stronger floral, earthy or caramel-like notes.
This is why honey can be thought of more like a natural food with its own character rather than simply a sweetener.
Honey and crystallisation
If your honey becomes cloudy or develops crystals, don't automatically assume it has gone bad.
Natural honey can crystallise over time. The speed and texture of crystallisation can vary depending on its composition and storage conditions.
Crystallised honey is still honey.
If you prefer a liquid texture, gently warming the container can help soften it. Avoid overheating, especially if you want to preserve the honey's natural characteristics.

Also, honey should not be given to infants under 12 months of age because of the risk of infant botulism.
